How can I use this to boost the signal from an existing neoAirv2? I don't see how the neoAir connects to the plug.

The Neo plug boosts the signals between Neoair and neohub. This works once you have paired the Neo plug to the hub via the app
The Neo plug also boosts the signals between Neoair and uh8-Rf and Rf switch, this is automatic with no additional paring required.
